Hier sind wir wieder, mit dem ersten Artikel aus 2022! Die Weihnachtsferien sind offiziell vorbei, Wir haben einfach ALLES gegessen und wir haben die Weihnachtsdekorationen weggeräumt. Allerdings scheinen die Kilos, die wir über die letzten Wochen zugelegt haben, nicht so einfach verschwinden zu wollen. 🙂 Mit meinem üblichen Appetit, welcher mich immer begleitet, möchte ich heute über Essen sprechen, gutes Essen! Über Honig um genau zu sein, den guten Honig! Mein schlechtes Gewissen treibt mich an, weshalb ich darüber sprechen möchte warum Honig besser ist als Zucker und warum… Hast du dich je gefragt ob Honig besser als Zucker ist? Ja genau, Honig ist so Süß und gesund, Warum solltest du nicht Honig an stelle von Zucker in deinen Rezepten verwenden können?

Nun, andererseits ist Zucker weit verbreitet, ich bin sicher das sich in jedem Haushalt eine Packung Zucker finden lässt – natürlich ist er auch günstiger als ein Glas Honig. Außerdem gibt es kein Risiko den Geschmack und die Aromen zu verändern, was mit Honig passieren kann… solltest du dich nun für Zucker oder Honig entscheiden?

Lasst uns zuerst verstehen woraus Honig besteht, vielleicht verhilft uns das zu einer klareren Idee. Ich weiß das es dich überraschen wird: Honig besteht hauptsächlich aus Zucker und Wasser! Der enthaltene Zucker besteht hauptsächlich aus Monosacchariden wie Fruktose und Glukose (in etwa 70%) und Disacchariden wie Saccharose. Der Wasseranteil des Honigs beträgt zwischen 17% und 19% (merke dir diese Werte das ist wichtig!).

Dabei spreche ich nur der Einfachheit halber nur von Wasser und Zucker, natürlich enthält Honig noch viele andere Inhaltsstoffe in geringeren Konzentrationen, wie Säuren, Aminosäuren, Mineralien, Vitaminen, Pollenstaub und vielen mehr. Diese Inhaltstoffe sind es auch die den Geschmack, den Geruch und die Qualität des Honigs beeinflussen können.

und Zucker??

Nun zu raffiniertem Zucker, kennst du den Wissenschaftlichen Namen? Saccharose – aber wie kann das sein? Ist es derselbe Begriff der oben erwähnt wird? Ja, genau! Der einzige Unterschied besteht darin, das der Zucker im Honig hauptsächlich aus Fruktose und Glukose besteht. Das sind einfache Zucker. Wohingegen raffinierter Zucker schlicht Saccharose ist.

An dieser Stelle ist es wichtig zu wissen das unser Körper mehr Energie aufwenden muss um komplexere Zucker wie Saccharose zu verarbeiten. Einfache Zucker wie Fruktose und Glukose hingegen werden viel einfacher verdaut und geben dir schneller Energie.

Was ist denn nun süßer? Zucker oder Honig?

Honig besteht zudem noch aus Wasser während Zucker… sagen wir ‚trocken‘ ist. Die gleiche Menge Honig hat also viel weniger Kalorien als Zucker. Vorsichtig damit, natürlich heißt das nicht das es sich dabei um Diätessen handelt. Eine gute Balance sollte die Grundlage sein, wie in jedem Fall. Wir können zugeben das ein Teelöffel voll Honig, anstelle von einem Teelöffel voll Zucker, unsere Tage problemlos versüßen kann. Außerdem enthält Honig viel Fruktose (der gleiche Zucker welcher in Früchten zu finden ist), damit kann man sehr effizient süßen. Das bedeutet auch das du besonders vorsichtig mit der Dosierung und den Proportionen sein musst wenn du Honig verwenden möchtest. So Brauchst du weniger Honig als Zucker um den gleichen Süßungseffekt zu erzielen!

Gibt es noch mehr zu wissen?

Honig hat außerdem noch antibakterielle Eigenschaften. Er kann vorbeugend oder lindernd für fast jede saisonale Krankheit angewendet werden. Zum Beispiel bei Allergien oder der Grippe.

Doch da gibt es noch einen weiteren unglaublich wichtigen Punkt: jedes mal wenn du Honig kaufst – hierbei meine ich richtigen Honig – direkt vom Imker deines Vertrauens, unterstützt du Menschen welche Bienen lieben und sich voller Leidenschaft um sie kümmern. Ich mag den Gedanken, dass Honig direkt vom Imker zu kaufen eine echte Geste der Freundlichkeit ist. Welche dem guten Imker erlaubt mit ihrer Mission fortzufahren! Die Mission die Bienen voller Liebe zu schützen(welche dadurch auch ein wenig zu deinen Bienen werden, denkst du nicht auch?) und damit auch die Welt in der wir leben (welche natürlich auch zu dir gehört, nicht wahr?).
