Miele millefiori…cioé?

Miele. Profumo di miele. Ovunque, cosí intenso. In queste ultime settimane si sta smielando alla grande, é la stagione d’altronde. Devo dire che il miele mi affascina parecchio. Una cascata dorata. Tanto ipnotico quanto dolce. Salutare quanto buono. Versatile nei suoi usi e abbinamenti. Tutti lo conoscono, ma pochi per davvero. Ce ne sono di tantissimi tipi e ovviamente ogni barattolino é diverso, é impossibile riprodurlo identico in serie. Ci sará sempre qualche piccola sfumatura o elemento che varia e questa unicitá non puó che renderlo ancora piú speciale a parer mio. Tuttavia, tra i vari tipi – il nostro qual é?

Quando qualcuno é interessato al nostro miele, tra le primissime domande ovviamente ci viene chiesto „che miele é?“ oppure chi ha idee/gusti piú chiari ci chiede ‘avete miele di castagno?‘ o ancora ‘é miele di acacia?‘. No, il nostro é miele millefiori.

Mi é capitato piú volte di notare – con dispiacere – che venisse fatta della vera e propria discriminazione nei confronti del miele millefiori. Sullo stesso scaffale o a una stessa bancarella, accanto a un acacia, o un agrumato veniva venduto a meno, come se la qualitá fosse diversa. Piú bassa. Ovviamente non é cosí, ma nell’immaginario collettivo circola un po’ questa idea infondata. E se ti dicessi che, di base, qualsiasi miele é un millefiori?

Passo indietro…

,,,come faccio a sapere che un miele d’acacia é un miele d’acacia e un miele di girasole é proprio di girasole? L’apicoltore osserva le fioriture, le segue (qualcuno anche proprio fisicamente, con il nomadismo) e le api con lui. Pertanto, ad esempio, se l’acacia é in fiore e nel raggio di 3 km ce n’é veramente tanta, le mie api 99 al 100 faranno rifornimento a non finire proprio lí e quindi il mio miele sará d’acacia, o per lo meno, PREVALENTEMENTE, d’acacia. Perché dico prevalentemente? Ma perché ovviamente su tutti gli alveari, su tutte le api che si hanno e su tutti i fiori, fiorellini, colture, cespugli, orti, filari,… vuoi che qualcuna non si soffermi su qualche altro fiore? E ci sta, é naturale che sia cosí. Ma questo vuol dire che un po’ tutti i mieli in fondo sono millefiori.

Ma quindi come si fa ad avere la certezza sulla composizione del miele?

L’apicoltore non osserva solo le fioriture e il territorio circostante, ma anche il miele stesso. Grazie a tanta esperienza, dal suo colore, la sua densitá, il suo aroma e profumo si puó capire qualcosa di piú. Ad ogni modo, se si vuole essere sicuri al 100% senza fermarsi alla mera osservazione, bisognerebbe portare il miele in laboratorio. Lí e solo lí, se ne puó capire l’esatta composizione. Quando ad esempio il miele é per piú alta percentuale d’acacia, verrá etichettato in quanto tale. Tuttavia quando le apine sono andate da diversi fiorellini e non ce n’é nessuno che prevale in particolare allora lí si chiama millefiori, ma capisci che non c’é nulla di male in tutto ció? Non significa che il miele millefiori abbia qualcosa in meno… Anzi, lo rende ancora piú unico: un ritratto speciale e sensoriale della zona di raccolta.

Miele millefiori…primavera o estate?

Come spesso accade qui, mi piace sottolineare quanto poco ne sapevo prima di conoscere Basti e il mondo delle api. E se la dicitura ‘miele millefiori’ non mi era nuova, non posso dire lo stesso per la sua suddivisione in millefiori primavera ed estate. Una precisazione piú che doverosa perché tra i due c’é l’abisso (a riprova che i millefiori sono veramente da mille fiori e cambiano un sacco, da periodo a zone diverse).

Qual é la differenza?

A fine primavera (da fine maggio a metá giugno circa in linea generale) si raccoglie il miele millefiori primavera che deriva dal nettare raccolto dalle api nelle settimane precedenti – quindi che si intende? Tutti gli alberi da frutto – meli, ciliegi, cotogni, prugni,… – e i fiorellini tipici di questo periodo (tarassaco, colza,…).

Da fine giugno a fine luglio circa raccogliamo il miele millefiori estate – questo ha un contenuto piú selezionato diciamo, perché se la primavera é la primavera e porta con se un tripudio di fiori, colori e chi piú ne ha piú ne metta, in piena estate il ritmo rallenta e solo certe piante sono in fiore, come ad esempio nel nostro caso il tiglio.

Ecco un giorno per curiositá ci piacerebbe mandare in laboratorio un po’ del nostro miele, ma ad ogni modo, partendo come dicevamo dalla osservazione possiamo giá tirare delle somme. D’estate il paesino in cui viviamo é veramente pieno di maestosi tigli in fiore, sicuramente non sbagliamo nell’affermare che il nostro é un miele millefiori estate con prevalenza di tiglio – che influisce sul suo colore e la sua consistenza, diversi rispetto a quello della stagione precedente. Mentre in primavera si possono notare piantagioni di colza nelle collinette circostanti, quindi quella sicuramente abbonda nel nostro millefiori primavera, ed é anche ció (insieme al tarassaco) che contribuisce nel renderlo piú bianco e cristallizzato piú velocemente.

Insomma, non ci sono mieli di tipo A o mieli di tipo B, ci sono solo una marea di fiori buonissimi a cui le api non sanno resistere e dai quali si ricava del miele la cui unicitá é pazzesca. Pensaci a ogni dolce cucchiaiata che ti concedi.
