Abbiamo voluto aprire il mese di giugno con uno dei prodotti delle api a noi piú caro: il miele! Un po’ perché é ufficialmente iniziata la stagione, un po’ perché addolcita dalle coccole di parenti e amiche dopo tanto tempo lontani, …insomma non potevo e non volevo parlarti di altro! E sai una cosa? Continueremo su questa scia per un po’. Perché é buono, fa bene, perché piace a noi e alle nostre api ed esplodiamo di gioia nel parlarvene! Prima di avvicinarmi all’universo apistico non avrei mai pensato ci fossero cosí tante cose affascinanti da sapere al riguardo…ho appreso tanto da Basti e nonno Heinz, ho letto un po’ di libri, ho seguito dei corsi (sí, ci sono pure dei corsi!). Pensa te quante cose ci devono essere su questo miele! E cosí, abbiamo deciso di condividerle con te… perché le cose belle e buone vanno condivise (uno dei nostri motti).

Il miele é cosí buono…ma che ha dentro?

Come abbiamo approfondito qui Composizione del miele: alla fin fine il miele é composto da…? – Gaeblini, il miele é costituito essenzialmente da zuccheri e acqua. Per quanto riguarda gli zuccheri si parla in particolare di glucosio e fruttosio. Ma é solo acqua e zucchero? Sfatiamo il ‘falso mito’ del miele liquido: considera che tutti i mieli sono destinati a cristallizzare, quindi a diventare piú solidi. É un processo naturale a cui non si puó scampare (a meno che venga trattato ad altissime temperature, ma a quel punto perde anche molte delle sue proprietá benefiche e particolaritá).

Vabe ma allora, se é quasi tutto zucchero… miele e zucchero si equivalgono??

Mmm no, decisamente no! Proprietá benefiche del miele a parte, si tratta di zuccheri diversi: quelli del miele si digeriscono piú rapidamente e danno un valore energetico a breve termine. Inoltre, il miele ha un apporto dolcificante piú alto. Un cucchiaino di miele dolcifica molto di piú di un cucchiaino di zucchero, per intenderci! In aggiunta, se acquistato da buoni apicoltori, sono delle vere e proprie spremute di fiori super naturali…tutta un’altra storia!

Spremuta di fiori…ma quindi é un prodotto di origine vegetale?

Secondo te, é un prodotto di origine vegetale o animale? Di primo acchito, si potrebbe pensare di originale animale…lo fanno le api, no? L’ape é un animale taaac. No, risposta errata. É un prodotto di origine vegetale, perché -signori e signore- viene da fiori e pianteee! Ti ricordi quando qua Perché le api sono cosí importanti? – Gaeblini, dicevamo che le api vanno di fiore in fiore e inconsapevolmente diventano impollinatrici incallite? Ecco, perché visitano tutti questi fiori? Se l’impollinazione é un qualcosa che portano a termine senza rendersene conto, non é quello lo scopo della loro visita. Quindi perché tutto ció?

Perché le api raccolgono il nettare dai fiori. Le bottinatrici vanno di fiore in fiore, una volta riempita la sacca melaria di nettare corrono al loro alveare e via: lo affidano alle loro fidate sorelle che se ne prenderanno cura. Questa é una delle prime domande che avevo posto a Basti, la cosa in effetti mi preoccupava alquanto…Tuttavia, fortunatamente non ce n’era motivo. Difatti, le api preparano scorte infinite di miele, come se non ci fosse un domani. Continuano a prepararne e prepararne, instancabili e con tanta gioia di fare. Tant’é che diventano nervose se cambia il tempo e non possono uscire a bottinare in pace 😉 quindi questo che vuol dire? Anche questa una domanda che spesso ci si pone…ma il miele, scade o non scade? Beh se prendete un vostro vasetto di miele effettivamente troverete una data di scadenza (e deve essere cosí, é tra gli elementi da menzionare sulle etichette del miele). Nonostante ció, a dire il vero no, il miele non scade. Cos’é ‘sta storia? Essendo un prodotto alimentare bisogna specificare una data entro la quale é preferibile la consumazione. Ad ogni modo, se lo si consuma successivamente non succede assolutamente nulla. Non ti preoccupare, non ti sentirai male per intenderci! Generalmente la data di scadenza é a un anno e mezzo, due anni dalla smielatura, fino a quella data le proprietá e l’aroma rimangono pressoché intatti, poi pian piano iniziano ad alterarsi e far sembrare il miele piú semplicemente ad una sostanza zuccherina. Pertanto, non diventa nocivo, non é velenoso, non fa male, fa solo meno bene di quello che poteva potenzialmente prima. Ovviamente la sua freschezza dipende anche dalla sua conservazione. Se conservato lontano dalla luce solare, a temperature fresche e in un luogo asciutto non ci saranno problemi e non si rischierá nemmeno che fermenti.

Il mondo del miele attraverso i sensi

Insomma c’é veramente un mondo affascinante ed infinito dietro questo alimento. Spesso si ha una concezione un po’ piatta del miele: dorato, semi trasparente, super dolce e liquido! É cosí nel nostro immaginario, quasi bidimensionale e triste. Ma a dire il vero – al di lá di una percezione soggettiva – puó avere veramente tantissime sfumature. E qui non parlo solo di colori, ma anche di profumi, di aroma e di sapori. E un altro aspetto che lo rende speciale é che mai e poi mai troverai due vasetti di miele uguali al 100%: il suo risultato dipende dai fiori bottinati dall’ape, da come e quando é stato smielato dall’apicoltore, da come lo stai conservando tu,…ma ogni volta che hai tra le mani un vasetto di miele puoi veramente pensare di avere un pezzo assolutamente unico. Ci hai mai pensato? Bo, io piú ci penso e piú lo trovo meraviglioso!
